Homemade Granola Bars

With 3 little boys in our house it seems like snacks are a constant request. They are always hungry! I'm not kidding...and I hear it only gets worse! When I was in the hospital after having our first baby boy, one thing I remember one of the nurses telling me was, "Boys are great, but get ready, they eat a lot!"

Now, my boys go through phases like I'm sure most kids do that they are either eating everything in the house, or nothing at all. But when they are eating and needing snacks seemingly every minute, I like to make sure they are healthy snacks.

I've seen some recipes for homemade granola bars and adapted them to this one, simply based on the ingredients I had on hand. These bars are definitely "kid tested, mother approved!" We all love these...even my husband. They taste so much better than store bought and I'm sure are better for you, and most likely less expensive too.

So here they are...yummy!




Ingredients:

2 cups oatmeal
1 cup whole wheat flour
1/2 cup flax meal
1/2 cup brown sugar
1/2 cup chocolate chips
1 tsp. cinnamon
1/2 tsp. salt

1 egg
1 tsp. vanilla
1/2 cup applesauce (or oil)
1/2 cup honey

Preheat oven 350. 
Line 9x13 with foil and then spray with Pam.
Mix dry ingredients
Mix wet ingredients
Pour wet into dry and stir.
Pat into pan.  Bake 15-20 minutes depending on your preference of chewy vs. crisp.
Cut in pan and then let them cool in the pan.



So easy and so quick! In probably just about as much time as it would take me to go to the store, I can make these. I double this recipe and it lasts for about a week! I just place them in a gallon sized zip lock and keep them in the pantry.

I like the bars with applesauce instead of the oil. It's a bit healthier and tastes great (don't tell my husband that I use applesauce though...he's always kind of weirded out when I sneak these healthy tricks into recipes)! ;)

You can also switch out the chocolate chips for whatever you like...peanut butter chips, butterscotch, raisins, or go crazy and with craisins and white chocolate, or any other yummy combination!
